Our Vanilla and White Chocolate Truffle all dressed up for Mother’s Day! It was always a popular option on our macaron menu so we thought we’d offer it up as a cake and cupcake flavour. Swirled with a Madagascan vanilla and Belgian white chocolate buttercream, of course! It’s then drizzled with more Belgian white chocolate, sprinkled with edible sugar pearls and finished with a Vanilla and White Chocolate Truffle macaron and a Belgian white chocolate prism shard! How pretty is that rose gold streaked macaron too!
Here are all the little Mother’s Day beauties boxed up and waiting to be enjoyed! If you’re good then maybe your mum might let you have one? We’d recommend a huge pot of tea (Yorkshire of course) and a coupe of champagne!
Mother’s Day cupcakes!
Of course here’s an aerial shot… we love those! Flavours? Raspberry and Laurent Perrier rosé champagne, Passion Fruit and Lemon, Vanilla and White Chocolate Truffle! The cute rosebud piped cupcake and hexagon messaged topped are both zesty Passion Fruit and Lemon! Definitely a popular choice. Filled with tangy lemon curd and piped with a fragrant passion fruit infused buttercream. One features adorable little rosebuds and light olive green rose leaves. A glittering hexagon with ‘mum’ hand painted in rose gold surrounded with sugar pearls adorn the other!
We recently treat ourselves to a gorgeous bottle of Laurent Perrier rosé champagne. We thought it would be the perfect addition to our fruity raspberry cupcake for a super luxurious treat! Our single rose cupcakes feature a raspberry preserve infused with sparkling Laurent Perrier pink champagne then swirled with raspberry buttercream. Finished with a fondant rose leaf and lovely edible rose gold bees this is such a pretty treat!

Mother’s Day cupcakes and macarons!
Firstly, our pretty macaron and rose adorned cupcake is available in our popular Vanilla and White Chocolate Truffle flavour. Fluffy vanilla cupcake swirled with blush pink Madagascan vanilla and Belgian white chocolate buttercream. Each one is drizzled with more Belgian white chocolate and sprinkled with shimmering sugar pearls. To finish we add a single pink organic rose and a Vanilla and White Chocolate Truffle macaron splattered with rose gold!
The second flavour in the box of 6 cupcakes is Raspberry Chambord! This is a wonderfully fruity and boozy cupcake, but you can opt to leave out the Chambord for anyone tea total. Filled with Chambord infused Raspberry preserve each cupcake is then swirled with pink raspberry flavoured buttercream roses! Two are finished with an green fondant leaf and one features a white edible plaque with ‘mum’ hand-painted in rose gold.
Here’s a lovely closer look at that hand-painted plaque. Our edible rose gold always adds such a sweet and subtle hint of glamour… perfect for a stylish mum! We’ve also added a subtle white pearlescent shimmer to each plaque. There’s always room for a little extra glitz.

Now for some pretty little macarons! Our special Mother’s Day macarons feature rose floral motifs, hints of rose gold and a hand-painted ‘mum’. These macarons nestle into a clear box with a luxury gold base. We then finish each box with a pink grosgrain bow and our pearlescent tag!
To match our Mother’s Day cupcakes each box of macarons also includes one macaron featuring a pink hand-painted ‘mum’. Paired with hand-painted roses and trendy rose gold streaks these macarons are a special treat!
Our rose painted macarons are available in our popular Raspberry Chambord flavour. Each filled with a dollop of Chambord liqueur infused raspberry preserve and pink raspberry buttercream! The metallic streaked macarons are Rose Gold Prosecco; painted with edible rose gold and filled with Bottega Gold Rose Gold Prosecco (our favourite) buttercream!

If you’ve been searching everywhere for the perfect treat you can surprise mum with this Mother’s Day then look no further. Our Raspberry and Lemon Meringue Eclairs recipe is pretty much irresistible. Seriously… light airy choux pastry? Check. Zesty lemon? Check. Fruity raspberry? Check. Whipped chantilly cream? Check. Plus, get extra points for piping pretty meringue rosettes on top and torching them for a slight caramelised crunch!
Raspberry and Lemon Meringue Eclairs recipe!
Makes approx… 10 large eclairs
Ingredients and tools needed for the choux pastry…
Let’s start by making the fluffy choux pastry! Pre-heat your oven to 200C/180C fan/400F/Gas mark 6. In a saucepan add your diced salted butter and water and heat until the butter has melted. Once melted turn the heat up so that the ingredients come to a boil.
As soon as the butter and water mix boils add in your plain flour and mix well until a ball of somewhat shiny dough forms. Nothing should stick the sides of your saucepan at this point.
This step takes a bit of energy and strength so keep that in mind. Gradually add in your beaten egg whilst stirring the dough vigorously. Your dough should get slightly stiffer and glossier as you add the eggs!
Lightly spritz your silpat / silicone baking mat(s) with a little water.
Now add the choux pastry mix to a piping bag fitted with a large plain round tip and pipe equal sized lines of dough along your baking trays. For our eclairs we were feeling pretty generous so we made sure to pipe out fat lines of the choux mixture. Generally, your eclairs can double and even triple in size in the oven so keep this in mind!
Now place in your pre-heated oven and bake for 30-40 minutes!
To test if your eclairs are ready you’re going to have to remove one from the oven and slice it open. They tend to weigh or feel a lot heavier than they look. The inside of your eclair should also feature a lovely hollow middle and should feel a little dried out – perfect for fillings!
While you wait for your choux pastry eclairs to cool down you can begin making and prepping your fillings and raspberry glaze.
To make your pink raspberry glaze add 100g of icing sugar to a bowl along with a few drops (remember to taste test) of raspberry essence, pink food colouring and 2 tablespoons of water. Consistency-wise you want it to be a cross between slow runny honey and toothpaste. Too thin and it will be almost translucent and run everywhere. To thick and it won’t spread across the top of your eclairs very well at all.
When ready cover with cling film and set aside.
Making Chantilly cream is ridiculously easy. We added 300ml of double whipping cream to the bowl of a stand-up mixer along with some vanilla bean paste (put in as much or as little as you like, but always remember to taste test) and with the whisk attachment whip until soft peaks form.
If you begin to over whip your cream (it will look clumpy and grainy) you can save it by just adding in around 3 tablespoons of non-whipped double cream (full fat milk will help too if you’ve used up all your cream).
When ready scoop it into a disposable piping bag fitted with a plain round tip and set aside.
Yay! Now your eclairs should be cool and ready to begin filling. Take each eclair and with a small sharp knife cut in half before smothering lemon curd onto the inside of both halves.
Once you’ve added your lemon curd pipe a dollops of Chantilly cream alternating between fresh raspberries onto the bottom half of your eclair! When done gently sandwich together the top and bottom pieces.
Now it’s time to add that cool bright pink raspberry glaze! We wanted a bit of messy / carefree look so we simply spooned ours on top. You can easily spread the glaze around just using the back of a teaspoon or a palette knife. When done add freeze dried raspberry pieces or even fun sprinkles!
For the insanely light and silky Italian meringue add the egg whites from 4 medium sized eggs and whip until stiff peaks form. Whilst these are whipping add the granulated sugar to a saucepan along with the 6 tablespoons of water and turn the heat on to high. Use a candy thermometer to keep a check on the temperature. You want your sugar syrup mixture to reach 118C / 356F. When it does slowly pour it down the inside of your mixing bowl whilst your whipped eggs are on a low speed.
If you’re still waiting for your sugar mixture to heat up and your eggs are all whipped keep those egg whites moving and switch your mixer to a low setting!
Now add your Italian meringue to a disposable piping bag fitted with a closed star piping tip. Pipe little rosettes along top top of each eclair. Start piping from the centre of where you want each individual rose and swirl around to finish on the outside.
For the final finishing touch lightly toast the tops of your italian meringue rosettes with a cooks’ blow torch! Yay!!!
One of the best things about choux pastry is that it is insanely versitile. You can change fillings and toppings for different flavour combos… we love the idea of a Snickers inspired dessert with salted caramel, chopped peanuts and belgian chocolate whipped cream! Plus, there’s no sugar in the bake itself so if you were feeling particularly adventurous you could play with savoury ideas like crème fraîche, sautéed mushrooms, chives, poached eggs and cream cheese!

Cookie cutters are always one of those tools on our wishlist. For our top 10 Mother’s Day baking essentials these garden / floral cutters by Meri Meri are sweet, easy to use and fun to decorate. If you’re scared of icing them to add detail why not simply add some bright sprinkles into your cookie dough before cutting and baking!
Rolling pins are usually kind of boring for the at home baker with a choice of white or the traditional wooden variety. Now there’s some pretty cool styles and colours on the market. We love this blush pink ceramic version with wooden handles. It’s great for cookies, rolling out fondant / sugar paste or even giving biscuits a good smack (or several) for cheesecake bases.
This is one gorgeous stand-up mixer. Classic and simple with a slight metallic / pearlescent glimmer. What’s not to love? OK, it looks gorgeous, but it’s also more than handy at whipping up anything from cake batter to fluffy meringues!
Whipping up super cute cupcakes doesn’t have to be a chore. You can keep them simple and sweet with fun cases or liners. Seriously, sometimes extravagant decorations aren’t needed. Bake your cupcakes in these tulip-inspired yellow cases, swirl with buttercream and top with edible yellow flower petals for something easy yet impressive!
Cake pops sure are fun to make, but they’re made so much easier with a mould. Get super smooth and perfect pops with a silicone mould and make sure that each is exactly the same size! Coat with chocolate, drizzle with coloured candy melts and finish with bright sprinkles for a sweet treat!
OK, you can never really go too wrong with sprinkles. They’re fun, come in different colours and can be all sorts of shapes and themes. These sprinkles we’ve picked out are cool because they’re a little bit different to the usual sprinkle, instead they’re more like edible sequin shapes. Sprinkle these on top of your creations or add these to a cute baking hamper and get ready for the compliments!
Next on our top 10 Mother’s Day baking essentials is this KitchenAid attachment which is perfect for anyone who loves to whip up baked treats. We absolutely love love love it. The extended rubber ‘blade’ on the paddle means that all the batter, buttercream, meringue (etc etc) that clings to the side of the bowl is constantly scraped off and incorporated into the mix. Amazing.
Cute little paper flags make insanely quick and sweet cupcakes decorations. All you need to do is swirl your cupcakes with buttercream and add a flag! You can personalise them and write messages, ages or names on each one (always a great idea if your cupcakes are going to feature as place settings) too.
Something like candy melts are always simple but handy. They’re great for piping out cool shapes or messages to then add on top of cupcakes, you can dip cookies and cake pops in them and you can even attach pesky edible decorations onto cakes using a tiny dab.
Tell your mum just how much you love her with a heart-shaped cake! Bake, smother with pink strawberry buttercream, decorate with edible glitter, sprinkles and rose petals and you should have one impressive little treat! We love the idea of whipping up red velvet heart shaped cakes too!
